Slow-Cooker Chicken and Rice Recipe

Ingredients:

  • 1.5 lbs of boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup of chicken broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

1. Place the chicken breasts or thighs in the bottom of the slow cooker.

2. Add the diced onion, minced garlic, bell pepper, and tomatoes on top of the chicken.

3. Sprinkle the paprika, dried oregano, dried thyme, salt, and pepper over the ingredients in the slow cooker.

4. Pour the chicken broth over everything in the slow cooker.

5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.

6. About 30 minutes before the end of the cooking time, stir in the rice. Make sure the rice is submerged in the liquid.

7. Cover and continue cooking until the rice is tender and has absorbed the liquid.

8. Once cooked, shred the chicken with a fork and stir everything together.

9. Serve hot, garnished with chopped fresh parsley if desired.
