Ingredients:
- 2 ripe avocados, mashed
- Half cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons of peppermint extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup beaten sweet canes (non-obligatory)
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a massive bowl, cream together the mashed avocado and softened butter till smooth.
- Gradually add the granulated sugar and beat until properly combined.
- Beat in the eggs one by one, accompanied by the peppermint extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet components and blend until a dough forms.
- If desired, fold the crushed sweet canes inside for an extra festive touch.
- Scoop the dough into balls, approximately 1 tablespoon each.
