  • 6–8 corn tortillas
  • 1/4 cup vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, diced
  • 1 (16 oz) can of red enchilada sauce
  • 1 cup shredded queso fresco or Monterey Jack cheese
  • 1/2 cup of crema or sour cream
  • To taste, add salt and pepper.
  • Fresh cilantro, chopped (optional)
  • Lime wedges, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
