  • 1 pound boneless, skinless chicken breast or thighs
  • 1 tablespoon Cajun seasoning

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup penne pasta

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup of heavy cream
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions:

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned, about 5–6 minutes. Remove from heat and set aside.
  3. In the same skillet, add the diced onion and cook until translucent, about 3–4 minutes. Add the minced garlic and cook for an additional minute.
  4. Add the Cajun seasoning, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper to the skillet and stir to combine. Cook for 1-2 minutes, until the spices are fragrant.
  5. Add the chicken broth and heavy cream to the skillet, stirring to combine. Bring the mixture to a simmer and cook until slightly thickened, about 2–3 minutes.
  6. Add the cooked chicken back to the skillet and stir to combine with the sauce.
  7. Add the cooked pasta to the skillet, tossing to combine with the sauce and chicken.
  8. Transfer the pasta to a serving dish and top with shredded cheddar cheese. Serve hot, garnished with chopped fresh parsley if desired.
