Ingredients:

3-4 pound beef pot roast

2 tablespoons of olive oil

1 onion, chopped

3 cloves garlic, minced

1 cup of beef broth

1 cup of red wine

1 tablespoon of tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 teaspoon salt

1/2 teaspoon black pepper

2 carrots, peeled and chopped

2 potatoes, peeled and chopped

1 cup of pitted green olives

1 cup artichoke hearts, canned or marinated

1/4 cup chopped fresh parsley
Instructions:

Preheat your oven to 300°F (150°C).

Season the pot roast with salt, pepper, thyme, and rosemary.

Heat the olive oil in a large Dutch oven over medium-high heat. Sear the pot roast until browned on all sides, then set it aside.

Add more oil if needed, then sauté the chopped onion until softened. Add the minced garlic and cook for an additional minute.

Add the beef broth, red wine, tomato paste, and bay leaf. Stir to combine, scraping up any browned bits from the bottom of the pot.
